No-Bake Protein Brownie Bites

Macros per brownie bite (w/ sprinkles or powdered sugar): 120 calories-> 11P/10C/4F

Prep time: 10 minutes

Not gonna lie... I make these way more often than I should. But it's because they're SO easy, and I can whip them up any time I'm having a hardcore chocolate craving (which is like every night it's fine). If you've ever had the store-bought Albertson's brownie bites, you know exactly how these taste and you'll totally understand. Give these bad boys a try and thank me later.

INGREDIENTS:

  • 3 scoops UXO vanilla or chocolate bar protein powder

  • 1 Tbsp (7g) coconut flour

  • 1 Tbsp (5g) cocoa powder

  • 1 package (1.4oz) sugar-free, fat-free chocolate fudge pudding mix

  • 5 Tbsp almond milk

  • 5 Tbsp (70g) dark chocolate chips

  • Swerve confectioners sugar* OR chocolate sprinkles

STEP 1:

Mix all dry ingredients into a bowl.

STEP 2:

In a small bowl, microwave the chocolate chips with 2 Tbsp almond milk for 20 seconds. Stir until melted.

STEP 3:

Add the melted chocolate to the dry ingredients and fold everything together as much as you can before adding the remaining 3 Tbsp almond milk.

STEP 4:

Using your hands, continue to knead and work the "dough," pressing the dry ingredients into the moist part of the mixture. Form into one large ball before separating it into 8 pieces.

STEP 5:

Roll brownie bites into 8 round balls. Toss in your choice of sprinkles, confectioners sugar, or both ;)
